Winemaking

The berries are harvested at maturity and manually. They are separated from the stalks (destemming) before being placed in vats for a traditional maceration of 10 to 15 days. The frequency of pumping over is determined according to regular must tastings, the aim being to extract the best from the grapes. Malolactic fermentation is carried out. This wine is aged in vats for a few months to promote freshness and fruitiness.
