990 evokes the times of the feudal lords and the citadel of Fitou, which for a long time marked the border between the kingdom of France and that of Aragon. For more than a thousand years, the vineyard has been ideally located between the sea and the mountains on a terroir of limestone and shale.

Winemaking

The harvest is triggered after very precise monitoring of ripeness and daily tasting of the berries. The picking is manual and the grapes are meticulously sorted as soon as they enter the cellar. The 2 grape varieties are vinified separately, which makes it possible to make the most of the potential of each grape variety. The Carignan is vinified by carbonic maceration lasting 10 to 15 days, and a traditional maceration is carried out (with total destemming) for the Grenache. Part of the wine is aged in barrels for 12 months
