Winemaking

The harvest is manual with sorting carried out on the plot and then in the cellar. The grapes are destemmed then put in vats to be vinified by traditional maceration. Fermentation takes around twenty days with precise temperature control. Each grape variety and each plot are vinified separately in order to keep the potential of each terroir intact before blending. After malolactic fermentation in vats, the wines are blended to be aged in barrels for a period of 12 months.
