Syrah Grenache Cinsault

Rosé wine

Château Aigues Vives was built in 1817, on the remains of ancient Roman baths (agua viva), whose water quality was highly appreciated for its therapeutic virtues. Hence the origin of the name "Aigues Vives".
This presence of underground water tables is particularly sought after and beneficial to the cultivation of vines in this type of arid region, at 300 days of sun per year.
This property was first cultivated with vines by a Roman Consul. Many other owners then worked this wonderful terroir. The vineyard is planted with traditional grape varieties of the region with an average age of the vineyard of around 30 years.

Serve very chilled at 10°C with your seasonal dishes, salads, charcuterie, pizzas, pasta, barbecues

Winemaking

The grapes are harvested and sorted manually. The rosé is put into barrels at the start of fermentation after the blending of the different grape varieties. The fermentation temperature is self-regulated around 18-20 degrees over several weeks. Stirring is carried out daily during fermentation, then weekly for about 4 months. Bottling takes place within 6 months of harvest.
