Grenache Syrah Mourvedre
  • Its exposure, its location and its exceptional volcanic terroir give it a unique character - "Grandiose and wild"
  • A "jammy" and spicy garrigue nose. Subtle notes of black fruits and gingerbread. On the palate, the wine presents fine and elegant tannins and forms a nice balance with liveliness.
  • Since the 201 vintage7, the estate has been certified AB (organic wine) and DEMETER (biodynamic agriculture).

    Winemaking

    The harvest is triggered on the basis of maturity controls, analysis of polyphenols contained in the skins of the grapes and daily tasting of the berries as the harvest approaches. The harvest is manual, the grapes are transferred to the winery with the help of wine racks where a meticulous sorting is carried out. Each variety and each plot are vinified separately. The Syrah are partly vatted in whole bunches to be vinified by carbonic maceration. The other Syrah and the Grenache are destemmed and vinified using traditional maceration. After draining the vats and the malolactic fermentation carried out, each grape variety and each plot is sung separately. The blends are made after 12 months of aging in barrels. A light fining of the wine is carried out before it is bottled.
