    Powerful and fresh: aromas of citrus, white fruit (pear and wedge), scents of garrigue and anise, notes of toasted hazelnuts

    Great finesse and beautiful minerality, iodized notes with touches of white pepper and flint. Lots of freshness on the finish with notes of acacia honey

    Winemaking

    The harvest date is only triggered, variety by variety, when the grapes are at optimum maturity and after daily tasting of the berries. The grapes harvested by hand are pneumatically pressed as soon as they arrive at the cellar. The alcoholic fermentation is done 100% in French oak barrels. Temperature control preserves the freshness and integrity of the aromas. Aging in barrels lasts between 7 and 8 months until the Spring equinox with regular stirring (for two months).
