Red wine

The terroir of Maury is made up of secondary schistose marl whose flaky structure gives the roots the possibility of sinking deep into the ground to find the moisture they need to feed them.
The black color allows them to absorb heat during the day and release it at night, allowing the grapes to reach a very high sugar content.

Winemaking

Maury is a grain-mutated wine: alcohol is added (mutage). When alcohol is added to the fermenting must, the fermentation stops. The whole is macerated for up to 3 weeks to allow optimal extraction of anthocyanins, tannins and aromas. This results in long-lasting wines.
