    To be enjoyed with pan-fried scallops, fish in sauce or as an aperitif


    Winemaking

    The harvest date is only triggered, variety by variety, when the grapes are at optimum maturity and after daily tasting of the berries. The grapes harvested by hand are pneumatically pressed as soon as they arrive at the cellar. The alcoholic fermentation is done 100% in French oak barrels. Temperature control preserves the freshness and integrity of the aromas. Aging in barrels lasts between 7 and 8 months until the Spring equinox with regular stirring (for two months).
