Leaf Day

Leaf Day

In astronomy, Leaf Days are when the moon passes in front of the Cancer, Scorpio and Pisces constellations

In the Wineyard

Applications of herbal infusions, nettle slurry and comfrey take place during leaf influences, along with all methods used to stimulate sap flow in plants.

In the Cellar

This influence is preferred for our remontage, or pumping over, processes during fermentation stages.

In Tasting

Leaf Days reinforce the aqueous, botanical and bitter aspects. They are not considered ideal for tasting.

Fruit Day

Fruit Day

In astronomy, Fruit Days are when the moon passes in front of the Aries, Leo and Sagittarius constellations

In the Wineyard

Horn silica is applied during these fruit influences. Our iconic plots are also pruned on fruit days.

In the Cellar

This influence is preferred for all our blend tastings and bottling. It is also the time chosen for the soutirage, or racking, of our closed wines because it helps them open more.

In Tasting

Fruit Days are particularly good for wine tasting. They allow the wines to open and express their qualities.

This influence is favorable for all our blend tastings and bottling.

In Tasting

Flower Days enhance the floral scents and finesse of wines.

Root Day

Root Day

In astronomy, Root Days are when the moon passes in front of the Taurus, Virgo and Capricorn constellations.

In the Wineyard

Our applications of Maria Thun horn manure and compost preparations are performed during these root influences, along with all methods used to stimulate soil microbiology.

In the Cellar

This influence is the time chosen for the soutirage, or racking, of our particularly open wines because it helps them to close and refocus.

In Tasting

Root Days add a more closed and mineral aspect, better adapted for terroir wines.
