Winemaking

Vineyard yields are limited to concentrate the aromatic potential of the wine. Viognier is a grape variety that needs to be harvested at maturity in order to express its fullness and all its aromatic range. The grapes are pressed directly on arrival at the winery and then placed in thermo-regulated stainless steel vats. After cold static settling, alcoholic fermentation is carried out at low temperature to preserve the fruity aromas. In order to preserve the freshness of the wine, malolactic fermentation is not carried out.
