To be enjoyed at 12°C as an aperitif, with shellfish and seafood, grilled fish or fish in sauce, or with goat cheese


The grapes, harvested at night, are pressed immediately after harvest. This variety must be vinified with great care because of its great sensitivity to oxidation. For this, all operations are carried out in a neutral atmosphere. After static cold settling for 48 hours, the juice is vinified in stainless steel vats at low temperature in order to preserve the fruit. Temperature control helps preserve the freshness and integrity of the aromas. The wine is lightly fined and then bottled early to preserve its vivacity.
