- The terroir of Maury is made up of secondary schistose marl whose flaky structure gives the roots the possibility of sinking deep into the ground to find the moisture they need to feed them.
- The black color allows them to absorb heat during the day and release it at night, allowing the grapes to reach a very high sugar content.
