Gérard Bertrand reveals the history of the great terroirs of the South of France.
The medieval village of Montpeyroux has been built since 1070 around its castle. Located on the southernmost route to Santiago de Compostela, it has always been a crossroads on the routes traveled by pilgrims.
Its limestone terroir, renowned for its wild landscapes, earned it its toponym of Mont Pierreux.

Intense.

Nose

Complex bouquet of black olives, toast, truffles and overripe black fruits.

Blocked

Powerful, dense, concentrated, rich and very aromatic on liquorice, violet, spices and roasted coffee; and develops into a long, velvety finish.

Ideal at 18°c with grilled pieces of beef, roasted poultry and cured cheeses.

Winemaking

The work begins in the vineyard with a selection of the plots best suited to produce this type of wine.

The grapes are harvested for the most part manually. A double sorting system is carried out in the vineyard and in the cellar.

Vinification is traditional and the grapes are therefore de-stemmed before the maceration phase begins, which lasts between 3 and 4 weeks. A pressing is carried out, then giving way to malolactic fermentation. A third of the wine is aged for 9 months in barrels, the rest being kept in vats.
