Ideal at 18°C with lamb, game or aged cheeses

Winemaking

The harvest takes place when maturity is optimal. The grapes are destemmed as soon as they arrive in the cellar and then they are vinified in the traditional way. Daily pumping over allows a delicate extraction. The vatting lasts about twenty days with precise control of the temperatures. After pressing, the wine stays in vats for malolactic fermentation before being aged in barrels.
