    To be decanted for 1 hour, ideally served at 17° with Aubrac beef matured and cut from the tenderloin or rib


    Winemaking

    The vines are cultivated biodynamically and entirely worked by mule and horse. Leaf stripping is carried out before the entirely manual harvest. All the macerations are carried out in the concrete and thermoregulated vat, distinguishing each plot and each grape variety. Syrah: vatting and vinification using destemmed grapes. Grenache and Mourvèdre: destemming and light crushing during vatting. Controlled vatting temperatures. Very gentle maceration limiting tannic extraction. Just a few pumping overs for aeration and humidification of the cap. Carignan: vatting in whole bunches, vinification at a fairly high temperature favoring aromatic extraction.
