    Custody and Service Tips

To be enjoyed as an aperitif or with grilled fish and shellfish

    Winemaking

The harvest is manual and the different grape varieties are harvested separately. The grapes are cooled to 8°C and immediately pressed gently to extract the best juices. The fermentations are carried out at controlled temperatures and last about 2 weeks. Halfway through fermentation, part of the must is barreled in new French oak barrels for 6 months. The wine is then aged on fine lees with regular stirring.
