    Custody and Service Tips

    To be served at 18°C ​​with a rack of lamb, game birds or mature cheeses. This fleshy, harmonious wine with an elegant structure can be drunk now and bodes well for a very promising future


    Winemaking

    The harvest is manual and each variety is vinified separately. Part of the Syrah is vinified in whole bunches. The maceration time is around 20 to 25 days. At the end of winter, 100% of the wine is transferred to new barrels of 225 liters (French oak) for a period of 12 to 16 months in the magnificent cellar of Hospitalet (2,000 barrels). The best barrels of each grape variety are selected and blended to produce this cuvée.
