Choosing Change is a civic act that supports committed winegrowers. It is also the guaranteed pleasure of intense and fruity wines, with a gourmet and generous palate.
Winemaking & aging
The grapes are harvested by hand, destemmed and vatted in stainless steel vats. The alcoholic fermentation takes place under controlled temperatures to extract maximum fruit from the skins. During the maceration phase, pumping over is carried out regularly in order to extract aromas, tannins and color. After the malolactic fermentation, part of the wine is aged in 225 liter Bordeaux barrels for about 8 months, bringing melted tannins, the other part being put in stainless steel vats to bring aromatic complexity to the blend. After a light fining, the wine is bottled.
Tasting notes
The color has light purple reflections. On the nose, fruity aromas of blackcurrant, blueberry and plum. This wine has a nice length in the mouth.
Food & Wine Pairing
To be served between 16 and 18°C. with cold meats, red meats grilled on the barbecue or on the plancha, accompanied by mushrooms and Provençal vegetables fried (eggplant, courgettes with garlic, etc.)
