Territory
The southern slopes of the slopes reserved for the appellation have a combination of light and stony clay-limestone soils.
Climate
The natural protections, which surround the appellation area on three sides, limit maritime influences and give it a climate between the ocean and the Mediterranean.
Grape varieties
Crémant de Limoux: Chardonnay (30% mini) Chenin (10% mini), Chardonnay + Chenin (90% maxi). Accessory grape varieties: Mauzac + Pinot Noir (40% max), Mauzac (20% max)
Limoux white (still wine): Mauzac, Chardonnay, Chenin.
