Winemaking

The berries are harvested at full maturity during the month of September. A traditional maceration of at least 15 days is carried out in order to allow the typical aromas of Syrah to develop (white pepper, blackberry and violet) and to extract quality, round and fine tannins. The malolactic fermentation takes place in thermo-regulated stainless steel vats, then the aging lasts about 8 months. Part of the wine is aged in barrels. After a light fining, this wine is kept for several months in the bottle.
