Winemaking

The berries are harvested manually when they are at optimum ripeness. The entire harvest is destemmed to be vinified in the traditional way (10 to 15 days of maceration) in thermo-regulated stainless steel vats, with precise temperature control. Frequent pumping over allows the aromas, tannins and color to be perfectly extracted.
