Grenache Mourvedre Syrah
In 1886, even as the architecture of Baron Haussmann embellished cities, a legend was reborn, that of Mirmanda, the Celtic city populated by enchanting fairies in a poem called 'Canigou' evoking the mountain dominating the vineyard of the appellation Côtes du Roussillon Villages Les Aspres.

    Intense garnet with purple reflections.


    This wine opens with a beautiful cherry fruitiness with notes of liquorice and fine oak.


    Grey pepper and nutmeg accompany a firm but not harsh tannic structure that brings a lot of fullness. A generous and ample palate with a lingering finish.

    Decant for one hour and serve at 15°C with a rack of lamb or game


    The work begins in the vineyard with a selection of the plots best suited to produce this type of wine. The grapes are harvested largely manually. A double sorting system is carried out in the vineyard and in the cellar. The vinification is traditional and the grapes are therefore destemmed before the maceration phase begins, which lasts between 3 and 4 weeks.

    Pressing is carried out, followed by malolactic fermentation. Two-thirds of the wines are aged for 9 months in barrels, the rest being kept in vats to be blended in Spring. After a light fining, the wines are bottled and kept for several months before marketing.
