This Cote des Roses cuvée celebrates the Mediterranean Art of Living. The soil, very varied, is essentially made up of hard limestone from the scrubland, schistose soils but also gravel brought by the rivers and rivers of Languedoc. The warm and windy climate ("semi-arid Mediterranean climate with a mild winter variant") favors the ripening of the grapes and their good sanitary condition, while maintaining freshness thanks to the altitude and the effect of the sea, which mitigates high summer temperatures. Its bottle is unique with a rose-shaped bottom, created by a young designer from the Ecole Boulle. It is a wine that offers itself like a bouquet of Roses!

Winemaking

The different grape varieties are harvested separately with the aim of reaching the optimum ripeness for each one. The vinifications are therefore regulated in such a way as to respect the specific characteristics of the grape varieties and the capacities of the terroirs. Harvesting is mechanical with an on-board sorter. The grapes are destemmed, cooled to 8°C and sent to the press to extract the rosé must. Particular attention is paid to the pressing so as to keep only the most qualitative first juices. The juices are then decanted more or less according to the desired aromatic profile. The fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. The particularity of these vinifications lies in the attention paid to the color and aromatic purity of the wines. Finally, after a light fining, bottling takes place quite early in order to preserve the fresh and fruity character of the wines
