Choosing Change is a civic act that supports committed winegrowers. It is also the guaranteed pleasure of intense and fruity wines, with a gourmet and generous palate.
Winemaking & aging
The grapes are harvested at perfect maturity, in order to express the optimal potential of the variety. A meticulous sorting of the harvest is carried out when picking and receiving the grapes. The grapes are destemmed and crushed before being put into vats. The macerations last between 12 and 20 days before pressing. The particularity of Merlot lies in its precocity, its character of ripe fruit and its very silky tannins. It requires a lot of finesse during the vinification so as not to "fade" its aromas. The temperatures are mastered and controlled precisely in order to favor the expression of the varietal aromas of the Merlot and to extract a dense and silky tannic structure. After a light gluing, the assembly is carried out. The wines are then aged in stainless steel or cement vats for 6 to 12 months.
The color is dark and dense ruby. The powerful nose develops aromas of red berries, cherries and wild strawberries, accompanied by intense notes of spices, prunes as well as leather and truffles. The palate is supple and aromatic, with notes of peppers, eucalyptus and mint. Round and elegant, structured and powerful, the finish lingers on the palate with elegant, melted tannins.
Food and wine pairing
Serve at 16°C with red meats: grilled beef, aiguillettes and duck breast, game and dishes in sauce (stews, osso bucco, etc.). Perfect on a cheese platter.
