    To be enjoyed at 12-13°C with hot and savory starters, fish, poultry and fresh cheeses


    Winemaking

    The different grape varieties are harvested manually and separately when the optimum maturity is reached for each. The grapes are destemmed, cooled to 8°C and sent to the press to extract the rosé must. The red grape varieties Grenache and Mourvèdre are delicately pressed, simultaneously with the white grape varieties Vermentino and Viognier (co-fermentation). The juices are then 100% barreled in new barrels for fermentation and ageing.
