Food & Wine pairing : Château de Villemajou Grand Vin

Château de Villemajou, acquired in 1973 by George Bertrand, is the place where Gérard Bertrand makes his first harvest at 10 years old. House and family estate, the Château de Villemajou is the real spearhead of the appellation Boutenac premier cru hierarchy of Corbières recognized by the INAO. The terroir is rough, distinguished by a pebbled soil, limestone blocks worn and polished by glacial streams from the Pyrenees, on a base of clay and sandstone. 

We find in this wine an exceptional mastery of the aging through the vinification in barrels of the majority of the vines, allowing to bring finesse and roundness to the juice. The typically Mediterranean blend radiates generosity in a rich collection of citrus fruits, lime, bergamot and also bitter orange flowers complemented by toasty and buttery notes. The palate is full and enveloping with a refreshing acidity on the finish. 

This wine can be tasted on its youth or waited a few years to gain complexity especially with notes of sweet spices. It will be the perfect companion of spaghetti alle Vongole, is Italian that delights us taste buds with these fresh St Jacques.
