Food & Wine pairing: Cigalus

The Domaine de Cigalus comes from the desire to create a world apart in viticulture in respect of nature and is entirely cultivated following the principles of biodynamics. This estate benefits from a warm and sunny Mediterranean climate, allowing an advanced maturation of all the grape varieties. 

The method of vinification in carbonic maceration of Syrah and Carignan allows an aromatic explosion and especially delicate tannins. These notes are found in the nose in the form of jammy black fruits, liquorice, spices but also truffles. 

It is better to let the wine breath some time or pass it in a carafe to allow a nice aeration and an optimal tasting of this cru. 

For this local wine, we offer you a local pairing as we enjoy it today with a cathare square of lamb  with herbs, accompanied by its mashed potimarron and braised seasonal vegetables.
