FOOD & WINE PAIRING: Château La Sauvageonne La Villa

Château la Sauvageonne is backed by the gates of Causses du Larzac and covers an area of ​​57 hectares at an altitude between 150 and 350 m. The topography and the diversity of soils, composed of Ruffles, sandstones and shales, bring a unique freshness to this cuvée La Villa.

The combination of red and white grapes coupled with aging in barrels allows to marry complexity and finesse. This vintage surprises us by its organoleptic proximity to the great whites of the region.

Tasting notes of crushed strawberries, sweet spices and flowers. The mouth is fresh and fat, it is characterized by a velvety grain of red grape varieties and brioche notes from white grape varieties. The originality of this wine is also in the fact that it blends well with simple dishes such as seafood with complex dishes. Today we suggest you to taste it on a rosé pork medallion stuffed with candied red fruits, accompanied by roasted potatoes to remind the buttered side of the wine.
