First few days of December, the last leaves fall: Autumn slowly fades before Winter. The vines slumber, a well-deserved rest. It is the ideal moment to start pruning. While the vines sleep peacefully, the sap has left the vine-shoot, and the wine-maker is starting out on one of his most important tasks: pruning the vine not only gives it its optimal shape, but also controls its yield by starting off its fructification process. It is essential to make the pruning as least traumatic as possible, to avoid scars which would lead to illnesses, and to balance the grapes and vegetation.
